Summer in Australia – our best summer recipes


As the Southern Hemisphere enters summer, with its radiant warmth and long days spent at the beach – it's time to embrace the fresh flavours of summer produce. There’s no shortage of fresh summer produce to be delighted by – from the first sightings of mangoes and peaches, to evenings spent by the barbecue. Here are some of our favourite summer recipes at The Collective that we can't wait to start cooking in summer in Australia – keeping us both cool, nourished and satisfied!.


BBQ Bliss – Grill Everything!

There’s a good reason why we’re renowned globally for our afternoon barbecues. Here at The Collective, we’re firing up everything on the BBQ, from steaks to fresh seafood and marinated veggies. One of our current favourites is BBQ’ing fresh Octopus skewers and serving it with a fresh potato salad. Fresh herbs are key here!


Prawns on everything

There’s no time of year when seafood is better than in the warm months. For us, a key favourite is prawns. A Christmas staple, they can be enjoyed in such a variety of ways. One of our current favourite recipes is a prawn and mango salad – that can be served as a main meal for lunch, or as a side dish for a buffet style dinner! All you need to do is toss cooked prawns with ripe chunks of mango, fresh avocado and your preferred greens (a crisp iceberg lettuce is great!). This salad can then be dressed with a zesty dressing of lime juice, good quality olive oil, honey, and a pinch of chilli flakes.


Watermelon and Feta Salad

This is one of our favourite pooltime snacks that can also easily be lunch at the beach. All you need is to cube fresh watermelon, and combine it with crumbled feta. Add mint or basil depending on what you prefer (and what you have on hand!) and then drizzle with balsamic glaze, and salt and pepper. Delish!


Mango and Yogurt Ice Pops

This is an easy recipe that can be made in advance so you always have a sweet treat on hand for when the moment strikes. Healthy and nutritious, you get to enjoy all the delights of fresh summer fruits while satisfying your sweet tooth! All you need to do is pop some mangos and honey (or maple syrup!) and a pinch of vanilla in a blender until you have a mango puree. Combine this puree with some yogurt into a bowl until it has a bright orange hue. You can then pop the mixture into ice pop moulds and leave in the freezer until set (or until you serve!)
